  1. My favorite honey is polyfloral (brush honey), but I would never call it middle-of-the-road. It has a very distinctive and strong flavor compared to most monofloral honey and is also very regional. I find orange blossom honey to be sweeter and simpler by comparison.

  2. In England, what we commonly refer to as honey is referred to as "runny honey".
    What you are referring to as "creamy honey"(I guess) is more commonplace.
    Myself? I grew up in a citrus grove. My favorite is orange blossom honey.:)

  3. Fun fact: I have a small amount of wasp honey I got in Mexico. Turns out there are a tiny number of ground wasps that make honey. Some live in Mexico. It's kind of sour (almost acidic) and it never ever crystalizes.
