That is gonna be the most bitter pan sauce ever. You need to cut red wine sauces with at least 50% other stuff like butter or stock
If you didn’t have garlic and herbs in there would you want to use that oil to as well ? I do ground beef for food prep every week in my cast iron skillet . Sear off 3 lbs on the grill direct heat / remove the meat /add onions till translucent /add my dry seasoning no herbs / deglaze with a bottle of negro modello/ Re add the meat and put on indirect heat on my barrel smoker, grill. Sorry for the long message here. Curious on your opinion.
