Looks good, but I would skip the EVO oil, the rendered fat from slow cooked guanciale should be plenty of enough fat. Extra olive oil is not necessary here or in other dishes using guanciale (grizia, carbonara, amatriciana, zozzona etc..)

You dont need olive oil when frying Guanciale, if you do it without oil, all the fat will melt and it will give you a much better taste
