  1. I love it – but it keeps triggering me that you guys don't use glass ingredient holders and continue to use plastic they literally cost 50c and 95% of professional kitchens in Australia use them, just like our mother did. 1000 uses versus 1, so it works out way cheaper

  3. I have been craving noodles in a sweet and spicy peanut sauce for months. Thank you for introducing me to a recipe I can make myself! I’m celiac, so I substituted Rummo gluten free spaghetti and tamari. If you can recommend a better gluten free noodle, that would be awesome! (No offense to the Rummo…just a little tight)

  4. Chines here, throwing some ideas branching off of these two!!

    – don't like peanut or have an allergy? Substitute sesame butter (well there really is no such thing as sesame butter, just use sesame paste, it usually comes with a certain amount of sesame oil in it), or if you are feeling adventurous, SUN FLOWER SEED butter (I didn't know this existed until 3 weeks ago until husband brought home a jar randomly and I fell in love with my jaw in the floor). Texture of these two butters will be different (sesame paste being harder to work with depending how smooth it is and its oil to paste ratio), but hey, Josh gifted us the recipes and it's on you to explore and find your personal best version!

    – can't do Sichuan pepper due to [reason]? Try subbing with a mix of black and white pepper powder; it's not going to taste the same as Sichuan pepper powder, but it will add the necessary layer of extra spiciness and body of flavor which is still better than simply leaving out Sichuan pepper powder.

    – I wonder if something can be done with a dash of Five Spice powder, hmmmm…

  5. I can't tell you how much I appreciate NOODLES recipes. It is one of the biggest, most craved food groups since I left home, and that high key bothers me, because there has been countless times that I just want a bowl of rich good noodleness after checking everything in the fridge and pantry. So again Josh thank You!!!!
