  1. This beef fajita is the best ever. You have to try at least once and you won’t like it any other way.
    Ingredients:
    2 pieces / 1 pound each outside skirt fajita beef.
    *This particular piece is Wagyu sirloin that was a very good price, but any beef outside skirt will be great.
    **For the marinade:
    1 tbsp tomato paste
    2 tbsp soy sauce
    2 cloves of garlic
    2 tbsp chopped fresh cilantro
    1 tsp paprika
    1/2 tsp chipotle chili powder
    1 tsp red pepper flakes
    1 tsp garlic powder
    1 tsp onion powder
    1 tsp cumin
    1 tsp coriander
    1 tsp oregano
    1 tbsp salt
    1 tbsp black pepper
    The juice of 2 1/2 or 3 large limes
    1/4 cup olive oil
    2 grilled corn on the cob

    Smoked sharp Cheddar cheese or and Mexican blend you like. Colby jack works well too. I highly recommend you get a block of cheese and shred at home.
    Large thin flour tortillas
    Preparation:
    Prepare the marinade by mixing all the ingredients listed above.
    Clean the meat from all excess fat.
    Marinate for at least 6 hours or overnight. It can stay great for up to two days in the fridge. Take it out of the fridge 2 hours prior to cooking. You can use a cast iron skillet or griddle to cook or you can grill outside. It will take 5 minutes on each side for a 1 inch piece cooked at 600 degrees F. Make sure to cover the grill for most of the cooking. Enjoy with guacamole, salsa or make a quesadilla like I did. So so good.
