There's something about the texture of the suction cups that gives me the ick. I can eat all the other parts but not those cups.

In 1990s NYC, There was a great Greek mid high end restaurant called Periyali. They had a grilled octopus starter made nearly the same way. Bought fresh then frozen to break down the fibrous flesh. Grilled then same after treatment. Plenty of lemon. Woof. Now I need some.

Such an underwhelming taste and texture. Chefs took the shape and beauty so they can play makeup artists while taking advantage of everyone's ignorance haha.
Finally someone giving out great info on octopus. Been chef at a Spanish place for around a decade now and we do exactly that. Freeze it, steam it and then we opt to marinate it as well in some olive oil, lemon, parsley and garlic then roast it and hit with some aioli, chili oil, herbs and lemon zest for serving.
