I like flat iron steaks but I think it’s disingenuous to talk about it as on par with sirloin
Flat iron is actually my favorite cut of steak. Less fatty than a ribeye and still has a strong beefy flavor
We have a steak house here in Germany called B306. They serve the flat iron and I can confirm that it's the best cut you can have!

Flatiron steaks are one of my favorite cuts. You can get some really fantastic marbling and they're always cheaper than other steak cuts

I just got put onto flat irons last year. Roughly $6 per steak versus $12-15 for a ribeye. Flat iron and chuck eyes have been the only steaks I’ve bought since.
