  1. Here is the recipe for the perfect summer dessert:

    Berry Cheesecake Salad

    4 ounces cream cheese softened
    ¼ cup granulated sugar
    4 ounces cool whip thawed
    3 cups sliced strawberries
    1 cup blueberries
    1 cup raspberries
    1 cup blackberries

    Beat the cream cheese and sugar together until fluffy and well combined. Gently fold in cool whip. Mix in berries.

    It is so good!

  2. Bridget declared, "it's super easy to do," and then proceeds through 22+ steps and about 2 hours from start to finish if you include all the chocolate chopping, crust work, mixing, 3 baking phases, and meringue prep. 😂 But it does look absolutely scrumptious!

    Julia: Mmm! Man, that's good!
    Bridget: Let's give it up for that graham cracker crust.
    J: Oh, that is..
    B: [laughs}
    J: That is one sturdy crust you made.
    B: It is?
    J: Oh Bridget! This is awesome!
    B: It's the stuff that campfire dreams are made of.
    J: [laughs] It is!
    B: Did I get my merit badge?
    J: Mm-hmm! You did. This is better than any s'more I've ever had actually.
    B: Mmm
    J: And we got to play with the blowtorch!
    B: And we get to eat the rest of that!
    J: [laughs] Thank you!
    B: You bet.
    J: If you want to make this amazing pie, start by making a graham cracker crust. Add a brownie layer, followed by a fudgy ganache, then top with a Swiss meringue and toast it with a torch.

  4. My go to perfect sumner dessert is my mother's recipe for Angel Pie. With its freeform baked meringue crust, homemade lemon curd filling and whipped cream topping it is cool, refreshing and light as a feather. It is also gluten free and can easily be made in a low carb version by subbing a sweetener like Serbia for the sugar. The short list of ingredients are already in most pantries and fridges:

    8 eggs, to be separated.
    Cream of Tartar 1/2 tsp
    Pinch of salt
    2 lemons, 1 zested, both juiced
    1/2 pint heavy cream
    Enough sugar to sweeten the meringue, the curd and the whipped cream to your taste.

    I prefer a light hand with the sugar in the meringue and whipped cream.
