The Perfect Dessert for Summer | America’s Test Kitchen
To transfer the gloriousness of campfire S’mores into pie form, we broke it down into layers. A hefty graham cracker crust gives support for a fudgy chocolate ganache and a marshmallow-like meringue filling.

Too heavy for a Summer dessert.
I'd rather just have s'mores after all that trouble. Give me a key lime pie over this for a refreshing treat in summer.
when you said "meringue" i legit screamed when you pulled out the blowtorch
Easy??
I love the episodes where julia and bridget get together to cook!
The only good thing about S'mores is that kids like to make thrm over an autumn bonfire outdoors. Take away the kids, the outdoors, and the autum bonfire and all you have left is a hopelessly sticky, sickly sweet, mess.
Here is the recipe for the perfect summer dessert:
Berry Cheesecake Salad
4 ounces cream cheese softened
¼ cup granulated sugar
4 ounces cool whip thawed
3 cups sliced strawberries
1 cup blueberries
1 cup raspberries
1 cup blackberries
Beat the cream cheese and sugar together until fluffy and well combined. Gently fold in cool whip. Mix in berries.
It is so good!
Two of my favorites!! Bridget Lancaster and Julia Collin Davison!!
Bridget declared, "it's super easy to do," and then proceeds through 22+ steps and about 2 hours from start to finish if you include all the chocolate chopping, crust work, mixing, 3 baking phases, and meringue prep. 😂 But it does look absolutely scrumptious!
Looks like a fine chocolate pie, but Summer is when fruits are ripe & plentiful. Aren't fruit deserts more light and refreshing in hot weather?
Awful hair coloring on both ladies. Looks fake. Change hairdressers!
Just had the urge for chocolate pie. That was a close one 🥧 That pie is criminal!
🎉
Looks wonderful! Before you put the marshmallow on, it kinda looked like a giant Toffifay (which is also great).
My grandkids are gonna lose it.
It looks wonderful but it has waaaay too many steps…this is a special occasion pie to me…
Why yes! this recipe segment did end rather abruptly.* The final 50 seconds:
Julia: Mmm! Man, that's good!
Bridget: Let's give it up for that graham cracker crust.
J: Oh, that is..
B: [laughs}
J: That is one sturdy crust you made.
B: It is?
J: Oh Bridget! This is awesome!
B: It's the stuff that campfire dreams are made of.
J: [laughs] It is!
B: Did I get my merit badge?
J: Mm-hmm! You did. This is better than any s'more I've ever had actually.
B: Mmm
J: And we got to play with the blowtorch!
B: And we get to eat the rest of that!
J: [laughs] Thank you!
B: You bet.
J: If you want to make this amazing pie, start by making a graham cracker crust. Add a brownie layer, followed by a fudgy ganache, then top with a Swiss meringue and toast it with a torch.
J; From Cook's Country, a magnificent recipe for S'mores Pie.
J: It's a looker as well, you know what I mean? Like it's the full package.
B: It – it's spectacular.

Thanks for such treat!
As always, it's wonderful to see you both together!
What can be better than pie form you ask: the Kirkland s'mores clusters.
Decadent, calorific but I’m not mad about it 😂 😋
Oh yum! Be still my giddy heart!
My go to perfect sumner dessert is my mother's recipe for Angel Pie. With its freeform baked meringue crust, homemade lemon curd filling and whipped cream topping it is cool, refreshing and light as a feather. It is also gluten free and can easily be made in a low carb version by subbing a sweetener like Serbia for the sugar. The short list of ingredients are already in most pantries and fridges:
8 eggs, to be separated.
Cream of Tartar 1/2 tsp
Pinch of salt
2 lemons, 1 zested, both juiced
1/2 pint heavy cream
Enough sugar to sweeten the meringue, the curd and the whipped cream to your taste.
I prefer a light hand with the sugar in the meringue and whipped cream.
Half a day to make, half a minute to eat
Yummy 😋🤤
Perfect summer dessert except for over an hour of having a hot oven on and creating a sink full of dirty bowls. I’ll make my s’mores by the fire and have some ice cream instead.
I'd love to see lemon curd cheesecake with meringue.
WOW! That is something you have once in a life time…..😂 ❤ Thank you ladies!
Excessive amounts of sugar… is the perfect dessert for summer?
Want to see lots of low or no carb recipes please. 😊
Death by chocolate❤❤❤❤
Ok. Someone from ATK read my mind for a summer treat.
Did they say a non-stick pan? Any they use a sharp knife to cut the pie?
Loooove s’mores!
For the record, sharing the pie is optional and I will be exercising that option.
THANK YOU FOR YOUR ATTENTION ON THE MATTER!!!
So sad that I cant have a piece of that RIGHT NOW!
Oh, dear. I'll pass on this episode because I never liked S'Mores.
Yum, ❤Chocolate 🍫. Miss my Mom's 1950's style chocolate pies. All her pies were heavenly, but her meringue was loose/watery.
