The Prego Roll
Ingredients
4 200g sirloin steaks
6 cloves garlic, finely chopped
2 fresh bay leaves, roughly torn
2 Birdseye chillies, finely chopped
2 tbsp chopped flat leaf parsley
1 tsp dried oregano
1 tbsp tomato paste (puree)
40-60ml (2-3 tbsp) peri peri sauce
juice of 1 lemon
sea salt, to season
60g butter, at room temperature
1 tbsp olive oil
4 Kaiser or Ciabatta rolls, halved

Method
Step 1: Prep the steaks with marinade
Sprinkle half of the garlic over the steak along with the bay leaves. Pound lightly to flatten steaks and infuse with the garlic and bay.
Combine chillies, parsley, oregano, tomato paste, peri peri sauce and lemon juice in a shallow tray, season with salt.
Add the steaks and toss to coat well, then refrigerate for at least 30 minutes to marinate.
Step 2: Prep the garlic butter
Combine remaining garlic and butter in a small bowl, season with a little salt and set aside.
Step 3: Cook the steaks and sauce
Heat the oil in a heavy based frying pan over medium-high.
Cook the steaks, for 3-4 minutes, turning, until well browned and cooked to medium-rare. Set aside to rest.
Reduce heat to medium and add the marinade to the pan. Bring to a boil, then reduce heat and simmer for 3-4 minutes, until thickened to a sauce consistency.
Step 4: Finish and serve
Toast the ciabatta rolls lightly on a grill pan, then spread with the garlic butter.
Thinly slice the steaks, then pile onto the buttered rolls and drizzle with the sauce to serve.

  1. BIG thing to pay attention to here. The meet mallet tenerizor.
    You dont smash the mean, just light taps. The paper is so the mallet does not throw the meet around.
    Seson beforehand so it pushes the seasoning into the meet while you LIGHTLY hammer it. Small taps, light wrist action. That way when you eat the sandwich the meat will break apart rathern than pulling out a full sliver.
    Everything else i just preference.

  2. i dont like the editing at all, it makes the video seem jittery and the chopping board has got to go man, i could tell you were making something i just couldnt see it lol what has happened??? also seems like you are very very far away like im beginning to think this short was a joke? im scared to check recent shorts of yours to see if this is the new normal because i cant watch them like this and im a big fan of uncle andy

  3. The best prego roll ever was from Rosettenville, Johannesburg, South Africa. Not sure if its still a thing there but every year they have a Portuguese fair called Lusito Land and there you used used to be able to get the best best prego rolls

  4. Hey Andy, in the video between the tomato paste and the Peri Peri sauce you pour something into the marinade from a jar, what is it?
    It's not referenced in the description but looks like red wine
