Eh just use 1tbsp baking powder for every two lb and smoke em at 275 to 165, toss in sauce and sear. So much easier and tastes amazing.
400 degrees exactly 60 mins and it will be crispy. Just use paper towel to dry wings, apply oil, before adding rub and smoke and they will be money.
