Pretty sad if you go to a restaurant to eat cracklins.
This was fantastic – had some of the best crackling I’ve ever done. Usually do crackling on the meat, so this was a first for me because I was slow braising the pork belly. Thank you!
Isn't it better to put the salt before putting it in the fridge? The salt will penetrate more easily and make the skin drier
Looks and sounds amazing, in the oven now…..
Add salt, refrigerate for 24 hours, brush off salt, do not add oil, cook in oven. Great taste, not salty or oily.
What sort of oil ?
Believe it or not this works just as well in a microwave with kitchen paper towels. Same trick works with stale cereal and potato chips.
Am definitely going to give this method a try!
