Ground turkey, which is typically lower in fat than beef and pork, can be notoriously dry and crumbly. Ashley is here to show us a few key ingredients to deliver turkey burgers that are moist on the inside with a crisp exterior.

wow that was a real big bite!
I like the recipe and looking to make them, but unlike traditional ATK recipes, the specific ingredient portions for ALL components is not communicated and the link to Get The Recipe, you have to pay for, soo you're screwed and have to estimate! Ugh.
Looks delicious, love some crispy cheese! I can't get ground turkey where I live, I wonder if this would work just as well with ground chicken?
These are THE BEST! I made both the onion recipe along with the burgers!!! Sooooo gooooood!
1- rolled oats will release fibber into the Burger better than bread crumbs
2- granulated garlic will not only give flavour but also texture and moisture control
3- Brine that meat! with salt and sugar just like it had when it was a living animal
I made these and they were juicy and good. I eyeballed the panko and might try to get away with less next time, just because I’m trying to stay away from carbs. The red onion pickle tasted great on the burgers.
I made this and it was phenomenal. I didn’t expect much but tried it and I’m glad I made four so I could freeze some for another day.
I tried this! (Not the pickled onions… just the turkey burgers) The turkey "burgers" were amazing. I usually don't care for turkey burgers much…. often too dry and not much flavor unless you add a ton of salt and spices.
So moist and flavorful. I might have found a new go-to.
My mix came out on the wet side so I couldn't really form patties – no problem. I plopped a blob in the hot oiled skillet and gently mashed the blob down into a patty with a spatula. 5 min nice and brown on the 1st side and then they flipped over easily.
For condiments, I used thinly sliced scallions and 1000 Island dressing. Yes…. more calories than plain ground turkey with the cheese, mayo, etc., but 95% turkey compared to a beef burger I feel like I'm winning a little but didn't give up flavor.
I really think I'm going to give these a try, I think the one thing missing was a good layer of Japanese mayonnaise under the top bun!
As a Type 1 Diabetic, this will no longer be allowed in my diet. I had to take 14 units of insulin for this recipe, compared to a bacon beef blue cheese burger 6 units of insulin. The Pankow and the mayo/cheese are just too many calories. Was tasty, buy I can't afford the carbs.
Never trust a cook that takes serranos for jalapeños or limes for clementines, let alone has to read the labels of containers in order to know what spices they are…
Everything looked good until the cold ungrilled bun
Those look absolutely delicious and I'm going to make them soon. The only change I'll make is to toast the bun a bit in the pan. Just to get that crispy edge.
I don't eat turkey but those burgers look yummy. I'm going to try this using ground beef.
Are you sure those were jalapenos? Look like serranoes to me. 🤔
Ok, food aside, which looks great, I'm wondering why you have 2 outlets right next to your pot filler that don't look to be GFCI's. Usually, outlets within 18" from water are required to be such. LOL Just want you to be safe. You make delicious looking stuff and don't want you to have issues.⚡
Hey test kitchen. More Lan please!
Hi, thank you for sharing your recipes, looking forward to trying it. Your dress is lovely and your hair is beautiful.
Looks good but since I can’t have eggs or cheese, these are out for me.
Mmmm mmmmm I love turkey burgers!!
I despise turkey but Mister Ashley's husband, you eat good, don't you?
Soon as you said LJalapeno I was like…time to change the recipe 🙂 Can't stand those things. Is the meat cooked all the way through? I don't eat raw meat of any kind.
Ashley: Makes pickled red onions and admits to always having a jar in the fridge.
Ethan Chelebowski: “Preach on, girl! PREACH!”
Isn't the usual point of a turkey burger to eat a very lean and low-fat meal? (At least it is for the people in my personal circle — a small sample set, I admit.) If so, doesn't adding cheese and mayo defeat the purpose?
I don't mean to dispute what you are saying, but I grow peppers. The 2 peppers you cut up look like Serrano peppers no jalapeno peppers…….just saying
Wow, you removed the entire reason to use ground turkey at the beginning of the recipe. Big brain there.
What i s the word that Ashley used a word that sounded like "panad". She used it a 3:38 in the playback time.
Another great video with Ashley!!
At 6:03, you have the meat thermometer vertical, so that the tip is very close to the hot pan. If you put it in from the side, you can get the tip in the centre of the patty, and measure the internal temperature accurately.
Is there a recipe for the pickled onions? I can find several recipes in the archives but none that align with Ashley's recipe. Right now I am just grabbing her ingredients on the fly from the video.
Ashley you're the BEST!
I have never made turkey burgers before, but I have to try these!
When it comes to burgers tomatoes to me are the worst enemy. They take away the main flavor.
I find that the ingredient that improves turkey burgers the most is beef
👌🏼😎 🍔
Tonight, dinner tonight, worth leaving work early and stopping at the store!!!
Very very good
That looks so delicious. Turkey burgers can be dry and the additions in your recipe look so delicious and will add moisture and flavor. I will make this recipe. Thanks for sharing. 😀
Beef, onions and jalapeños!
So jealous of this recipe tasting. Looks great. Ummmmmm food
How many peppercorn, mustard seeds, & allspice seeds?
That mixture looks delicious for pig feet, chitterlings, neckbones, & country style pork ribs.
I absolutely love turkey burgers and have several pretty good recipes-some from ATK. I can’t mix dairy and meat in my kosher home. Do you have a suggestion to substitute the Monterey Jack?
Thanks Ash. I needed this video today, since I am laid up with a swollen left foot. My 86 year old mother ran over it yesterday with an electric cart. It hurts. Can't wait to cook these for my family.
These are basically meatballs
Anybody know what the fat content is after adding mayo and cheese? As compared to beef? (Maybe you might as well just eat a beef burger?)
#1 ingredient — 99 to 1 ratio of beef to turkey

Salutations 😋
Hi can we substitute mayonnaise with Something else
I'll have to try this. Ground turkey is less expensive than beef. And quick pickles are a great idea. But I never use purple onions for anything, they are awful. I prefer yellow, or any sweet onion, and I also prefer serrano peppers over jalapeno. I am still picking some from my garden.
