Use 6.5 fluid ounces (200 milliliters) of the potato broth and mash those potatoes. Add the potato broth and give it a good stir. Now, throw in 1 tablespoon of sugar, 1 tablespoon of live yeast (or 1 teaspoon of dry yeast), and 1 teaspoon of salt. Crack in an egg and mix well.
Next, sift in 4 cups of flour (about 600 grams) and stir. Add 20 milliliters of vegetable oil (equivalent to 1 tablespoon and 1 teaspoon) and knead the dough for about 4-5 minutes. It should be soft and slightly sticky. Cover the dough and let it rest for 1 hour in a warm place.
In the meantime, finely chop 3.5 ounces (100 grams) of spring onions and the boiled eggs. Melt 2 ounces of butter (about 70 grams), and season it with salt and pepper to your liking.
Divide the dough into 16 equal pieces, shape them into balls, and add the filling. Close the dough around the filling to create little pouches. Roll them out into flatbreads with a 12 cm (5-inch) diameter and fry them in a pan with a bit of oil. Cook each side for about 2 minutes until golden brown. Don’t forget to place them on paper towels to get rid of excess oil. These mini breads are soft and incredibly tasty, thanks to the combination of potato dough and egg onion filling.

Sift 3 cups of all-purpose flour (about 500 grams) with 1 teaspoon of salt. Pour the yeast liquid into the flour and stir. Add 1 tablespoon of white sesame, 1 tablespoon of flax seeds, and 1 tablespoon of olive oil. Knead the dough by hand, then cover it and let it rise in a warm place for an hour.
Divide the dough into 6 equal portions and make balls. Keep them covered while you cook. Roll out the dough into 7-inch (18 cm) diameter circles and cook them on a preheated non-stick skillet. These pita bread will be soft and tasty, perfect for any time of the day.
