Caribbean-style pulled jackfruit & king oyster mushrooms BBQ Bowl

Everybody used to clown me for bringing “rabbit food” to the BBQ, but tell me this doesn’t look like a bowl worth trying? It is fulling and flavorful. Recipe is in the captions below for the Caribbean-style pulled jackfruit and king oyster mushrooms.

Ingredients:

2 cans of Jackfruit
6-7 King Oyster mushrooms, shredded
2 tablespoons of Avocado oil
1 tablespoon of Coconut amino
2 teaspoons of Onion powder
2 teaspoons of Garlic powder
3 teaspoons of Smoked paprika
Caribbean BBQ Sauce

Other ingredients:

Seasoned black beans
Cilantro lime quinoa
Grilled peppers
Pickled purple coleslaw
Grilled corn
Avocado
Roasted sweet potatoes and purple sweet potatoes

Step 1: Break down the jackfruit with your hands until it resembles shredded meat. Remove the seeds. Using a mandolin or a sharp knife, slice the king oyster mushrooms into thin strips.

Step 2: In a bowl, combine the avocado oil, coconut amino, onion powder, garlic powder, and smoked paprika. Pour this mixture over the mushrooms and jackfruit in a baking pan.

Step 3: Smoke the mushrooms and jackfruit, or place them in the oven. Bake at 300 degrees Fahrenheit for 10 minutes, then flip and repeat the process.

Step 4: Add your preferred BBQ sauce to the mushrooms and jackfruit and mix well.

Step 5: When you’re ready to serve, place the mushroom and jackfruit on a grill and cook until you notice some charring on the meat.

Step 6: Assemble your bowl and enjoy your delicious Pulled Mushroom BBQ Bowl!
