Pork Chops with Umami Kimchi Butter!
These umami rich, grilled pork chops with a savoury, punchy umami / kimchi butter sauce are my new obsession – and maybe yours too after you try them.

🧂 INGREDIENTS – UMAMI KIMCHI BUTTER SAUCE
This is enough to coat and drizzle over 4–6 pork cutlets:
250g unsalted butter
2 tbsp kimchi
1 small onion (diced)
2 tsp Worcestershire sauce
1 heaped tsp white miso paste
2 cloves garlic (minced)
1 1/4 tsp salt (add 1 – taste and decide)
1 tsp cracked black pepper
1/4 tsp chilli flakes
1 tbsp fresh sage leaves
1 tsp thyme leaves
Sauté everything gently, blend till smooth, then baste like your happiness depends on it.
When plating get sauce under the pork to be fancy. Over the top to be a savage.
IMPORTANT:
You can make ahead of time and re-heat. If it gets a bit thick, thin with water. If it splits, re-blitz it to emulsify again.

I can’t ever seem to get thicker pork chops tender. They always come out tough. Even cooked to 66c. So I now use the really thin ones from Woolies. Any suggestions? Thanks
Saw this was “upcoming” so I moved forward with getting a bone in pork roast out of the freezer yesterday. Already been to the grocery this morning for the Kimchi and the white miso (which I learned isn’t really white). Coming up!!!

I did a blueberry & rosemary based sauce / baste on some lamb forequarters a few weeks ago – that was a huge positive surprise, sounds weird but they had to be used and I was up for the challenge. Just squished the 1/2 tub with rosemary, garlic powder and a touch of olive to make the right spreadable mixture 😳🤪😘😘 No real recipe as I just winged it, like I usually do
