This Creamy Mushroom Pasta speaks for itself! 🍝
Another creamy pasta to add to your arsenal and a to-die-for mushroom recipe! 😇 There’s nothing quite like satisfying a craving for a big bowl of creamy pasta. This one’s so good, it’ll have you doing a happy dance around the kitchen! 💃🕺 Best part? You’re just 15 minutes away from having THIS in front of you (in real life)! 😍
✅ Mushrooms – I love using Swiss Brown or Cremini mushrooms for their rich flavor, but white mushrooms work too!
✅ Pasta type – Choose any long-strand pasta. Fettuccine or linguine are my faves for creamy sauces since they have more surface area for the sauce to cling to! 😋
✅ Pro tip: Don’t crowd the pan with mushrooms, or they won’t get that golden color… and remember, color = flavor!
Instructions:
1) Cook pasta in salted water for 1 minute less than the package instructions (start this midway through cooking the mushrooms). Before draining, reserve 1 cup of pasta cooking water, then drain.
2) Melt butter and olive oil in a large skillet over medium heat. (Using both prevents burning!)
3) Add mushrooms and cook, stirring regularly. Crank up the heat for that golden color! 🔥
4) Add garlic and keep stirring.
5) Toss in spinach leaves.
6) Pour in cream, season with salt and pepper, and cook for 1 minute, stirring regularly.
7) Add drained pasta to the sauce. Toss for 1-2 minutes until the sauce thickens and coats the pasta. If the sauce gets too thick, add a splash of reserved pasta cooking water.
8) Serve immediately with extra Parmesan on top! 🧀
