My mother, who grew up on a farm, taught me thoroughly rinse the livers, remove the membranes and any fat, cut the two liver lobes in half, and lay them on paper toweling briefly to soak off any water, then dredge them in salt & peppered flour (no garlic please!), place them in one layer on a platter or cookie sheet and let them stand for about 15 minutes to allow the flour to soak up any moisture. Stab each liver half a couple of times with a fork to keep them from popping, re-dredge them in the seasoned flour, then fry them a preheated large skillet in a mixture of oil and a bit of bacon grease. Do not overcook them! It's OK if they're light pink in the middle and they will cook a little bit more in the oven while you fry the rice; overcooking harshens their flavor and makes them tough When they're done frying, place them on a rack over a cookie sheet in a warm (200-225 degree) oven. Then pour off excess oil from the large skillet (don't pour off any of the browned bits) leaving 2 or 3 Tablespoons into which we added our cooked brown or white rice and fried the rice for a few minutes, adding salt and pepper to taste. Serve the livers over the rice, with or without bacon or caramelized onions. So good reheated or eaten cold the next day. No need for extra spices (especially garlic!) or herbs, this simple dish is fantastic with just salt & pepper.

  2. I followed this recipe to a ‘T’ and they were awful! They also don’t look like anything like the video. My husband grew up on organs and he can’t eat them either. We’re hoping the neighbours dog will enjoy them.

  3. My wife and I love chicken livers, I drain and dredge the livers in flour, start frying them in a electric skillet coated with a cooking spray. After a few minutes l add chopped bacon, a large white onion chopped and sliced mushrooms. I continue to cook all ingredients until done
