🌿 GREEN GODDESS SPAGHETTI 🍝 I don’t know what it is about a big, beautiful bowl of creamy green deliciousness…but DANG you all have been eager for me to share this rainbowtastic recipe! 😘 Your girl Gabrielle has been super pumped to put this dish out into the universe because, since I moved into my new studio kitchen I’ve been using my AeroGarden to grow SO MANY fresh herbs, kale, and lettuce indoors. How cool is that? 🌱 For this recipe I used fresh Basil, Parsley, Dill, and Chives all glowing and growing with ease in my colorful kitchen! 🎵 @onegreatvegan

Fresh Basil (¾ Cup)
Fresh Parsley (¾ Cup)
Fresh Dill (¾ Cup)
Fresh Chives (¾ Cup)
Garlic (3-5 Cloves)
Spinach (2 Cups)
Shallot (½ Shallot)
Avocado (1 Avocado)
Lemon Zest (½ Tbs)
Lemon Juice (¾ Cup)
Grapeseed Oil (3-6 Tbs)
Maple Syrup (1 Tbs)
Salt and Pepper to Taste
(Blend until smooth and creamy)
HEAT TOGETHER IN A LARGE PAN:
Coconut Milk (1.5 Cups)
Green Goddess Sauce (1-2 Cups)
Vegan Mozzarella Cheese (1 Cup)
Nutritional Yeast (¼ Cup)
MIX IN:
Al Dente Cooked Spaghetti (2 Boxes)
Splash of Pasta Water
TOP WITH:
Chopped Fresh Kale (¼ Cup)
Vegan Feta Cheese (¼ Cup)
