The reason you add a little oil with butter is to prevent burning the fats in the butter by raising temp required to burn it.
It makes a big difference.

Sometimes youll want to use a combination of oil and butter because butter has solids in it that can burn. The oil has a higher smoke point and is supposed to keep the whole mixture from getting too dark and bitter, but you stop use some butter for the flavor. Looks like it wasn't necessary for this recipe though.

Butter is not a good oil for frying. Its for flavour, the oil has a higher smoke point. If your dead set on frying in just butter, use clarified butter.
