Did you ever ever show the way the baffle is looks? If so I missed it.
After watching your channel for multiple years, I finally decided to buy an offset and went with the LSG Texas Edition, which has the scoop. It has been an awesome cooker and I haven’t had any issue burning my food. The only trouble I occasionally have is getting food to finish quickly, I spent ~7 hrs on some spare ribs. This may just be a result of me being new to offset cooking but any tips would help, and I definitely recommend the smoker!
Why not try fat-side-down brisket on reverse flow smoker? If it’s hot underneath then use that to your advantage and render the fat really well.

Hey what’s the best pellet smoker?
The scoop forces the hot gases up and over the meat, right? While that works great for thin cuts it reminds me of cooking in a Weber kettle with a SlowNSear. Works great but I found that thick cuts like a pork butt cooking “top down” seemed to require more time or wrapping. I prefer a no baffle design like my Texas Pit Crafters direct flow offset. While it has a relatively small hot spot next to the firebox I can still use the top grate for cooking the same cuts I’m cooking on the bottom rack. A design that really makes sense to me is the new Goldie’s pit.

Never gave you a thumbs down before but the fact that you did a whole video on this scoop and never showed it was very click bait and I personally dislike YT creators that do that. You’re better then that, don’t be a click bate creator.
Most of these smoker companies won't show their inner design, especially their plate design. It's also extremely frustrating for someone to make a video about it and not show the design prominently.
I have accidentally done all of the things he describes to my $40 used, wobbly, junky and in need of welding offset smoker. My welder friend will be gone for 10 weeks, so I guess I'm going to harbor freight and relearning new skill.

That's incredible! We live in Northern Indiana – close to South Bend and the Michigan line. May we ask…where did you purchase it? (We're in the market for a new and substantial smoker that holds up AND is well made!)

Why not just put the fat side of the brisket down since you're rendering the fat???
