1 Chinese cleaver is all you need
If I had to live with just these three knives I could, but for most of my cutting I love a small santoku knife.
Didn't know my bread knife was good for tomatoes!
Add a boning knife and you're set
Keeping a straight-edge knife edge sharp enough to skin a tomato has been a challenge, do you have any recommendations or should I always use a serrated knife? I do hone the edges frequently.
I hardly ever use a serrated knife, admittedly we don't have bread to slice. My favs are chefs knife, paring knife, and utility knife. What I can't do with my utility knife…
Looks like a good knife. I don't like them with a big bolster as you can't keep sharpening them. Eventually you have to grind down the bolster and it's hard to do at home.
So you test knives on food??

The victorinox does not stay sharp
I really believe the thin knife for skinning the fish or removing silver skin from pork/beef or deboning is a must. And if I had to chose only 3 knives I would skip the bread knife
