CHOCOLATE-SCOTCH DROPS (pg 13)
6oz semisweet chocolate chips
6oz butterscotch chips
1 1/2 quick oats, uncooked
1c salted peanuts

Melt chocolate and butterscotch chips in top of doubler boiler over hot (not boiling) water, stirring occasionally. Remove from heat; stir in oats and peanuts. Drop by teaspoonfuls onto waxed paper. Chill.

PARTY MEAT BALL APPETIZERS (pg 26)
Meatballs:
1 1/2lb ground beef
1/2c oats (quick or old fashioned, uncooked)
1 Tbsp parsley
1/2 tsp salt
1/8 tsp pepper
1/2c grated Parmesan cheese
2 eggs, beaten

Sauce:
1 clove garlic, minced
1 – 1lb can tomatoes
1 – 6oz can tomato paste
1 tsp salt
1/8 tsp pepper
1/2 tsp oregano
1/4 tsp basil

For meat balls, combine all ingredients thoroughly. Shape to form small meat balls, using about 1 tablespoon for each. Brown in small amount of shortening in large skillet, turning frequently until browned on all sides.
For sauce, combine all ingredients. Pour over browned meat balls; simmer about about 30 minutes. Serve in chafing dish.

BAKED SAUSAGE CUPS AND SCRAMBLED EGGS (pg 47)
1lb pork sausage meat
1/2 oats (quick or old fashioned, uncooked)
1/2 tsp salt
1/2 tsp rubbed sage
1 egg
1/2c milk

Combine all ingredients thoroughly. Firmly press into 6 – 5oz ovenproof custard cups. Place in shallow baking pan. Bake in preheated 350 degree oven for about 45 minutes. Unmold; drain on paper towels. Serve with scrambled eggs.
