Ingredients
makes 1 bread
12,5 gr fresh yeast
200 ml milk, lukewarm
50 ml water, lukewarm
100 ml vegetable oil
1 tsp granulated sugar
1 tsp salt
350 gr all purpose flour
For top
1 egg yolk
1/2 tbsp milk
1/2 tbsp yogurt
1/2 tbsp vegetable oil
1 tbsp sesame seeds
1 tbsp nigella seeds
Instructions
1. Make the dough: in a large mixing bowl, mix the milk, water, sugar and yeast. Stir well so the yeast dissolves. Add the oil, salt and half of the flour. Stir until combined. Add the remaining flour and knead until a elastic and smooth dough begins to form. Grease the mixing bowl with oil, place the dough, cover and set aside for about 40 minutes.
2. Line a baking tray with parchment paper and dust flour on baking tray. Set aside.
3. On a floured surface, place the dough on the lightly floured counter. Press all over it with your hands to get rid of air bubbles. Give a ball shape to dough. Then use your palm to flatten each ball into a flatter rounded shape. Use the blunt edge of a knife or hour fingers draw four parallel lines across the top of each dough round, then four more perpendicular to those to make a criss-cross pattern.Cover with a damp towel, and put aside for about 20 minutes.
4. Preheat your oven to 200C(392F) Make the glaze: in a small bowl, combine the egg yolk, milk and yogurt.
5. Brush top of bread with the glaze. Sprinkle nigella seeds and sesame seeds on top. Bake in preheated oven for about 20 to 25 minutes or until golden brown.

can we replace the fresh yeast with the dry yeast and how many grams we use please.

Are you you sure you didn't add extra flour while kneading? Dough is quite runny
Made this many times, my favourite, but I use an 225C oven.

Made Turkish Pida Bread as per the Ingredients and instructions given by you. Needless to say it came out perfect. Tried many Pida recipe but this particular one worked out wonderful. Chicken curry and Pida bread made a good combination. Family loved it. Love from India

I tried and 350g is very less it came out runny-ish and I had to add in 80g more to get the right consistency

one hundred percent hydration this bread? I don `t believe! I think you have the quantities wrongly written in the ingredients of this recipe. that bread is not one hundred percent hydration.
Made it came out well but didn’t like the eggy tasting outer crust. I will omit this next time
