I remember making this way back during lockdown & I truly believe it’s one of the easiest flat breads you can make and it’s delicious.

Recipe For Turkish Pide Bread:
Ingredients
15gms instant yeast
2 tsp sugar
200 ml milk, lukewarm
1/4 cup water, lukewarm
3 tbsp vegetable oil
2 tsp salt
3 cups all-purpose flour
For egg yogurt
1 egg yolk
1/4 cup milk
2 tsp yogurt
2 tbsp vegetable oil
For the Zatar onions
1 tbsp oil
1 tbsp butter
2 tbsp sliced garlic
1 cup sliced onions
Salt to taste
1 tbsp zatar
For garnish
1 tbsp sesame seeds
Method
1. Mix the yeast, sugar & water in a bowl and keep aside.
2. Now take the flour in a large bowl add the salt and mix well, add the yeast and milk and knead to smooth soft dough, knead for 5-6 mins then add oil and knead for another 5-6 mins till smooth, if the dough is too sticky add more flour and get it to consistency.
3. Proof the dough in a bowl till it doubles in size, usually take about and hour to 90 mins .
4. While the dough is proofing prepare the yogurt egg mixture, take all the ingredients and mix well, keep aside for later.
5. For the zatar onion, heat oil and butter in a kadai and fry the garlic and onion till caramelised, season with some salt and zatar and let it cool off.
6. Once the dough has proofed, knock it back and roll it out into a thick roti, press down the sides to make a thicker edges and place on a tray or a oven proof pan like this, make a diamond shaped pattern ad shown, make sure the cuts a little deep so they show after baking.
7. Rest this again for 5 mins then brush with the egg wash and sprinkle with sesame seeds.
8. Bake in preheated oven at 200 C for 15-18 mins, make sure the bottom get a colour too.
9. Top it with the caramelised onions and serve hot.
