Everyone talking about “no need to freeze” guys… they’re in America’s test kitchen… I think they know what they’re doing
My special technique ask the butcher, he does a great job, quickly, without freezing and with great skill. Be nice to your butcher
Just use a properly sharpened knife, no need to freeze.
