Vietnamese Grilled Lemongrass Pork Chops

Ingredients

5 small bone-in pork chops (about 2 lbs)
3 tablespoons fish sauce
2 tablespoons oyster sauce
1 tablespoon chicken bouillon powder
2 tablespoons granulated sugar
1 tablespoon honey
½ teaspoon ground black pepper
¼ teaspoon baking soda (meat tenderizer)
¼ cup minced lemongrass
1 tablespoon minced garlic
2 green onions (thinly sliced)
1 tablespoon oil

Instructions

Marinate pork chops with fish sauce, oyster sauce, chicken bouillon powder, sugar, honey, black pepper, baking soda, lemongrass, garlic, green onions and oil for 30 minutes or overnight in the fridge for better results.

Grill about 10 minutes per side depending on thickness at medium low heat or 350°F.

Brush with scallion oil for a finishing look. Serve with rice, cucumber, and a fried egg. Drizzle with soy sauce or Nuoc Mam Cham.
