1 block of feta cheese
8 oz cherry tomatoes
salt and pepper
olive oil
1 Tbsp chopped basil
2 cloves minced garlic
12 oz pasta of your choice (I used gluten free)
Preheat the oven to 400f
To a baking dish, add cherry tomatoes, olive oil and salt & pepper. Mix to coat with the olive oil. Then, add the block of feta cheese into the middle of the pan. Drizzle olive oil onto the feta. Add your basil and garlic. Then bake for 25-30 minutes or until tomatoes are soft and fragrant.
While feta is baking, cook your pasta to packaged directions in salted water. Save some pasta water!
Remove baking dish from the oven. Mash tomatoes and feta together. Then add pasta water to thin. Once you have a sauce, add your pasta and mix together.
To plate, add some feta pasta and garnish with basil. Enjoy!
