Learned from my mom and still use bayleaves a lot. I love the flavor it impairs in soups and bechamel especially. It is really difficult to find a bay tree in my area and wish I had one.
Ahh beef stew or pea soup would not be the same without em! I always add 4-5 Bay leaves to the pot! I agree that Turkish Bay Leaves taste and smell great! Cook on!
I agree in simple dishes I use it because I can tell it gives subtle complexity. However, in dishes with all kinds of bold flavors adding a bay leaf or two is a waste of money. At that point it’s a culinary placebo.
American bay leaves must suck. If you ever cross by a bay laurel tree in southern europe, try a fresh one. The closest thing I would compare to is cloves ( eugenol compounds)
1. Fresh is best 2. Powdered is purposeful 3. Set a dry edge aflame then throw into pot to release oils and roasty toastyness. 4. Dry leaves alone will take an hour to release flavorful oils. – but worth it.
I've never met a bay leaf I've liked. Yuck.

Reminder: don't eat them, remove them before you eat. If you don't belive me look it up.
Fresh bay leaves, yes. Dried bay leaves you’re fooling yourself. Almost all of the aromatic compounds have long gone.

They're good in flavoring rice, water, salt, white pepper and lemon rice with a rotisserie garlic thyme chicken. Is delicious.
Love bay leaves in so many dishes! Easiest & most impactful = put a bay leaf in the water when you're boiling potatoes to mash. Such flavor!
