Thank you. I love listening to your voice almost more than I love cooking. I am mildly aspergus and maybe that's why I appreciate you breaking the cooking process down. I think by understanding the basics you can then maybe challenge the old aphorisms like , never turn a steak more than twice, or marinate steak using an oil base. thanks again.
