As a vegetarian cook, i prefer the santoku with its tip and regularly use a scraper for scooping and scraping. I would never use a knife to transport food because it would endanger folks walking thru the kitchen.
Absolutely love them for veggie prep. They are sort of a unitasker, but they are just SO good at what they do, I really do think it is 100% worth having one on the knife rack.

Just buy a German steel chef knife, a paring knife, & a serrated bread knife. It’s really all anyone needs.
