I've always thought the hollows in the blade were a gimmick.

Why wouldn’t you take the time to learn how to pronounce the word you’re going to say over and over in a video? It’s the same sound from other Japanese words/names like Nissan, it rhymes with gone or pawn, we even have the phrase “Say ‘Ahhh’”. Please look up pronunciations, there’s no good excuse nowadays, especially for sounds that are present in your native language (esp. English speakers).

It’s pronounced “Sahn” not “saan” in Japanese: it’s さんとく
The crucial measurement is right behind the edge. It has to be really thin. There are lots of knives with 2mm at the spine and an angle of 15 degrees at the the cutting edge which perform really badly.
