I DO know which kinds of cinnamon are in my cupboard: Indonesian and Vietnamese “Saigon” cinnamons. Vietnamese is stronger and more powerful so I reserve it for things that should have that emphasis, like cinnamon rolls. Indonesian is for milder things where you want cinnamon to play a role but not overpower, like banana bread. I use both types in apple pie.
cassia is a cheap mildly toxic substitute not often used by those local to its range
The true cinnamon Ceylon helps regulate your blood sugar. The Cassia is high in coumarin,which thins the blood and should be avoided if you're currently taking blood thinners.
Ceylon cinnamon can also be found in Mexico which is part of North America too.
Well then, now everyone's gonna have to go and revisit the Cinnamon Challenge and try both.

I purchase Ceylon cinnamon sticks, roast them & grind them myself. It’s the most outrageous cinnamon you have ever tried. I also make cinnamon extract with the roasted sticks.

Ceylon [True Cinnamon] can be purchased inexpensive in Mexican Grocery stores. Buy whole and grind in coffee grinder, use just like the fake cinnamon.
Cassia is more toxic than Ceylon due to much higher Coumarin content.
I dont know, the one that costs a dollar at walmart. Tastes great.
