How we tested knife sharpeners:
All knife sharpeners work similarly: The user repeatedly drags the blade against an abrasive surface at a set angle, which trims and reshapes the blade by removing microscopic amounts of metal that are blunted or too far out of alignment. The four knife sharpeners we tested had one or two kinds of abrasives: ceramic and/or diamond. Ceramic abrasives are relatively sticky and can grab at the surface of the blade, while diamond abrasives produce less friction and a smoother edge. The design of the blade support chamber also differs: Some cradle the blade for smooth results, and others let the blade wiggle, producing ragged edges.
Our methodology:
ROUTINE SHARPENING
We assigned new copies of our winning chef’s knife to each sharpener. We dulled them identically and sharpened each according to manufacturer instructions. We slashed sheets of paper and sliced tomatoes and then repeated the dulling, sharpening, and slicing process four more times with different testers. Those knives that made clean cuts without crumpling the paper or damaging the fruit garnered the highest ratings for their sharpeners.
NOTCH REMOVAL
We filed notches in both ends of each blade and ran them through their respective sharpeners, timing how long—and counting the number of strokes—it took to repair the damage. The winning model required 76 strokes to repair the damage; other models required up to 223 strokes.
DESIGN
We compared how clear and precise the instructions were, how intuitive each sharpener was to use, and how easily they cleaned up. Those models that made jarring vibrations or piercing grinding noises were docked for these flaws.
BONUS POINTS
One model’s manufacturer advertised that the sharpener could narrow the angle of a traditional Western-style 20-degree blade to a thinner Japanese-style 15-degree blade. This refers to the angle of the bevel—the slim strip on either side of the blade that narrows to form the cutting edge. The more acute that angle, the sharper the blade will feel. We tested the claim by running a brand new 20-degree knife through this sharpener for 20 strokes on either side of the blade. Testers reported that the 20-degree knife was indeed almost as sharp as a 15-degree knife.

This knife sharpener is worth the money. So fast and it creates the correct cutting angle. Hint: Invest 20 minutes on learning how to use it the right way. If you do that, every knife you sharpen after that can be done in 30 seconds. So much faster than using a wet stone or other sharpeners. Best of all, you don't need any skills to get a very sharp knife. This sharpener does it all for you.

This sharpener converts the factory set edge to 15 degrees. I would not want to use this for maintaining high-end knives. This device would only be useful if the knives you are wanting to sharpen are already incredibly dull, and you don't care about the original integrity of the blade.
Buyer beware. This sharpener will scratch the living s*** out of the sides of your knives too. Test on old knife and see what happens. There isn't much room for error. Almost not worth it if you also value the beauty of your knives.
Nice explanation of knife sharpening. What were the rest of sharpeners ranking? I'm not spending that much money for my small collection of kitchen knives. Surely one of the manual models did well. Which one was it?
At 1:18 when cutting that tomato, you may wanna try moving to slice the tomato, rather than trying to smash the tomato in two. Like you do later on at 1:24 when you wanna show how nice it cuts. I can't help but view this channel as more of an infomercial channel with questionable credibility.

I just ordered the Chef's Choice brand of knife sharpener and hope it turns out to be as good as advertised, and suits my needs. I will use it to sharpen all my kitchen knives, and pocket knives as well.
I came into possession of one motorized one from the same brand. It was a total piece of shit. If you or your husband are handy with tools the only motorized sharpener I’d ever use is a bench grinder which you can use for multiple applications including buffing for the same price or maybe a little more than any of these pieces of garbage. Better option. Invest a good steel and use it after every session of cooking and invest in some stones a holder and oil and learn to treat your knife the way it should be treated.
