I grew up eating a lot of congee mostly including pork, egg, and/or fish. When I was creating this recipe, I wanted to find a plant-based alternative without sacrificing flavor. This mushroom congee recipe is supported by umami-rich shitake mushrooms, fragrant shallots and garlic, and vegan fish sauce. This is one of many Asian plant-based recipes that I want to highlight to show how plant-based recipes can be more than just salads and smoothies. It’s so good.
