The extra skin is good for stock makes a great broth it can be frozen for future use

That's why I need to do let it sit before I bake it. That sound like that's the key to marinate into to have that paste seasoning over there chicken thighs

This looks good, but I like my skin crispy. I cook my thighs on a rack so it stays out of the drippings, and bake it on 400 degrees for 40 minutes. Hits the mark just right every time.
