Braised Pork Trotters is cooked until the meat and skin are gelatinous, soft, and melt easily in the mouth, while the sauce is usually thick, sweet and fairly sticky.

This recipe is very simple. Three main steps : boiling, frying and braising together to make an unique dish.

▶ Ingredients :
● 1.20 kg, Pig’s Legs/ Pigs Trotters
● 50 g, Ginger
● 1 bunch, Scallion
● 4 pieces, Star anise
● 3​​ pieces, Cinnamon
● 6 cloves, Garlic
● Dried Chili Pepper
● 200 g, Palm Sugar/ White Sugar (to taste)
● 2 tbsp, Soy Sauce
● 4 tbsp, Fish Sauce
● 1 tsp, Seasoning Powder/ Salt
● 1 tbsp, Dark Soy Sauce
● 1.5 liters, Water.
* Note : Can substitute fish sauce with soy sauce.

Method :
1. Cut lengthwise the Pig’s Legs in half and then cut into medium pieces.
2. Add the meat in the water (1 liters), salt, ginger and scallion.
3. Cook until the skin is tender, 10-15 minutes.
* Note: When water start bubbling, remove the black bubbles from the bone.
4. Drain off and then fry on the skin-side until the skin is crispy, 4-5 minutes.
5. On the pot, Add the fried pork, palm sugar, soy sauce, fish sauce, seasoning powder, dark soy sauce and water.
6. Medium heat to a simmer, cover with a lid, braise for about 45 minutes.
* Note: If you use low heat to a simmer, it take maybe 60 minutes so it’s tender and delicious.
7. Turn to high heat, take the cover off. Let liquid till thicken, about 15 minutes.
8. Enjoy your meal !!!
