[만능 데리야끼소스를 곁들인 목살 스테이크]
※ 재료
목살(500g), 통마늘(3알), 대파(1대), 버터 1조각(10g), 기타 가니쉬(토마토, 양배추 등..), 소금, 후추
※만능 데리야끼 소스 (1:1:1:0.8 비율)
청주(100g), 맛술(100g), 양조 간장(100g), 설탕(80g)
1. 목살에 소금을 뿌려 밑간 한다.
2. 팬에 식용유를 두르고 목살을 굽는다.
자주 뒤집지 말고 갈색 빛이 날 때까지 위, 아래, 측면을 구워준다.
3. 전체가 갈색빛이 돌면 전자레인지에 1분간 돌려서 고기 속을 익혀준다.
4. 만능 데리야끼 소스를 청주 1 : 맛술 1 : 양조간장 1 : 설탕 0.8의 비율로 넣고
설탕이 녹을 정도로만 끓여준다.
5. 전자레인지에 돌린 고기에 데리야끼 소스를 붓고, 통마늘과 파를 넣어 졸여준다.
6. 중간중간 소스를 고기에 끼얹어준다.
7. 버터를 고기 위에 올려서 녹을 때까지 졸여준다.
8. 잘 졸여진 목살 스테이크에 후추를 뿌려 마무리한다.
9. 목살 스테이크를 썰어 접시에 담고 가니쉬와 함께 플레이팅 하면 끝!
