2 EASY RECIPES using Rotisserie Chicken! | Family Friendly Dinner Ideas

Crack Chicken Casserole

White Chicken Chili
2 cups Cooked/Shredded Chicken (I used Rotisserie Chicken)
1/2 medium onion, chopped
1 tbsp Olive Oil
1 tbsp Butter
2 Garlic Cloves, minced
1/2 tsp Cumin
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/4 tsp Oregano
1/4 tsp Cayenne
1/4 tsp Smoked Paprika
1/8 tsp Coriander
Salt & Pepper to Taste
3 cups Chicken Broth
1 can Cannellini Beans, drained and rinsed
1 can diced Green Chiles
1 cup corn
1 block 1/3 fat cream cheese
2 tbsp Lime Juice
1/4 cup Heavy Cream
In large pot, Saute’ onion in butter and olive oil. Add minced garlic. Cook for 30 seconds. Add chicken broth and seasonings, Stir to combine. Add remaining ingredients. Gently simmer for 30 minutes until creamy. Top with shredded cheese, sour cream, and tortilla chips!

  1. Yum. I have been making this for years. I also use cooked ground beef sometimes in place of chicken, ham and or turkey leftovers at Thanksgiving and scrambled cooked sausage and/or ham on Christmas morning. This is a great year round recipe I love to use all the different variations of this for dinner or breakfast.

  2. 🌻 Both look delicious!!! I buy that microwave bacon a lot but not the potatoes I need to try them in your cheddar bacon chicken casserole. I love making casseroles so easy to throw together and they feed a crowd. One the other hand having only a few people in the house we have a lot of left overs. Could this be made in two dishes and freeze one uncooked ?
