Hasselback Potatoes Ingredients:
6 x potatoes
12 teaspoons of duck fat
1 teaspoon of salt flakes
Seasoning Ingredients:
100 grams of salted butter
1 teaspoon of dried rosemary
1 teaspoon of dried thyme
½ teaspoon of garlic powder
¼ teaspoon of black pepper
Garnish Ingredients:
1 tablespoon of freshly chopped chives
Mac n Cheese Ingredients:
700 grams of dry uncooked pasta
500 grams of Colby cheese
500 grams of shredded cheddar cheese
250 grams of cream cheese
125 grams of salted butter
500 grams of diced and precooked bacon
100 grams of pork crackle
3 tablespoons of your favourite BBQ rub, I’m using Four Monkeys homebase today
6 cups of full cream milk
100 grams of pork crackle
Hashbrowns:
Main Ingredients:
2 cups of grated potato
½ a teaspoon of garlic powder
½ a teaspoon of onion powder
½ a teaspoon of salt
¼ a teaspoon of fine black pepper
¼ cup of shredded tasty cheese (cheddar)
1 tablespoon of plain flour (all purpose)
And 1 tablespoon of corn flour, this is the secret to crispiness
Oil (lots)
Cornbread Ingredients:
1 cup of polenta
1 cup of plain flour
½ teaspoon of bi-carb soda
½ teaspoon of salt
¼ cup of brown sugar
½ cup of unsalted butter (melted)
1 cup of buttermilk (shaken)
2 x large eggs (just the insides, no shells needed)
¼ cup of honey
1 cup of grated cheese (tasty / cheddar)
Mexican Street Corn Ingredients:
4 x corn on the cob
Cooking spray
¼ cup of cream Mexican agria (or sour cream)
¼ cup of mayo
½ cup of Cotija cheese crumbled (or feta)
2 cloves of garlic minced
½ teaspoon of salt flakes
Lime (juice and zest of)
¼ cup of coriander
Garnish Ingredients:
1 tablespoon of finely chopped coriander
1 tablespoon of feta cheese (crumbled)
½ teaspoon of chili powder
