Ceremonial grade is known for it is smoothness and less bitterness. Mixing with any additional flavours masks any bitterness and imitates that smooth texture. It is not about saving money. It is about the rational approach to resources =]

I get the feeling that the chef does not know that we who were born outside of Japan have been able to get high-quality matcha for, oh, over a century, and our families have been making matcha milkshakes ever since we learned that milkshakes exist.
