Steve, this looks incredible. Ive been wanting to try a pesto vodka sauce lately, using pesto instead of red sauce for the vodka sauce. But I bet using this zucchini sauce instead of pesto would be just as good.

I crisped up some pancetta bits in the pan and grilled the zucchinis in the leftover fat and also added lemon juice. It was perfect!

I always put dried mint into meatballs, meatloaf and even meat sauce for pasta! It's so good, not at all minty and if you're using ground turkey it takes away any weird "turkey taste"! A Mediterranean kitchen staple! I'm subscribing! ❤
