  1. Your presumption about Picanha is totally wrong. Meat with low marbling is a crapshoot. And you know this. Tri-tip appears to have better marbling but suffers from the toughness issue also. The lower cost of these cuts says it all. I have done 48 hours of sous vide on many Picanha, and more than half the time the meat is tough. Your entire reputation is being squandered on a false crusade. Also, steak cut into thin slivers is an inferior form of eating steak. It is necessary for inferior cuts.

  2. Holy crap… Guga from 5+ years ago…. You've come a long way, my friend. I just recently moved to Fort Lauderdale and find picanha everywhere. I have grilled it many times to perfection, but haven't sous vide it yet. When I looked it up, it took me to this gem. 100k to 5mil. Keep it up, brother. Cheers.
