  1. PSA, I used to remove the membrane on my ribs like this as well, but I recently discovered Gordan Ramsay's way of doing it and you dont even need a paper towel. Take a butter knife and get under the edge of that membrane about midway down and pop it up. Then, you can get under that membrane with a couple fingers and hold down the ribs with your other hand and literally just pull up with your two fingers and the whole thing comes off perfectly every time. Give it a try!

  2. Yep. one spray for the ribs, two for me! I will try your marinade! I want to hear about your seasoning of the Stargazer pan, your pan has the exact same flaking on the side of the pan. I guessing I did too many layers of seasoning.

  3. first stateside show i've seen where you had the courage to use that inverted, or downward (hot-air rises) cooking method so common in the old-world.
