I worked in a "Burger" shop at 14 years of age and we would toss the potatoes in the peeler, which was a tumbler with rough, sharp edged sides……and then we'd blanch them for the final fry later!!! Loved that job!! PEPPY'S in Ferndale, Michigan!!!!!!!!!!!!! I "try" to make your recipes, Gordon!!!!!!

Almond flour seasoned with dill and black pepper I use as healthier breading. It crisps up like breadcrumbs. Coconut flour I use as flour layer. So thin coconut flour layer because coconut flour is extremely absorbent. Then egg wash, then finished with seasoned almond flour thick layer.
