  1. I had potato chip cookies for the first time in 1998 at the Rock and Roll Hall of Fame. The cafe there had some recipes of Linda McCartney on the menu. They were delicious! I can't believe it never occured to me to make them for my family, I will now that I have this recipe.

  2. The cookies overall look really good, but the addition of potato chips appears to exclusively be a novelty. I can't imagine they add any appreciable changes over a traditional butter/shortbread cookie salted and dipped in chocolate the same way.
