What can I add instead of the cottage cheese?
Ingredients:
• 2 tablespoons olive oil for pan + extra for garnish
• 3 fresh bell peppers – washed, deseeded & sliced
• 2 finely sliced onions (red or yellow)
• 2 courgettes – halved & sliced
• 4 garlic cloves
• 3/4 basil stalks + a few extra leaves for garnish
• Salt & pepper to taste
• 250g fresh whole cherry tomatoes, washed
• 300g shell (conchiglie) pasta
• 4 heaped tablespoons cottage cheese
