  1. I'm going to try this with sweet potato starch, just for kicks (I cook a lot of Asian food, so I have a zillion kinds of starch on hand). I have some Samyang Buldak hot chicken mayonnaise coming in a day or two, so… yum!

    Then, when you do that, there's more. Now they want your name and for you to create a password.

  3. has anyone tried the same SP Fries recipe he made at the end but used the airfryer or oven instead of frying them in oil? I really want to make these but I really don't want to deep fry them if I don't have to. They look amazing! great info Dan Thanks

  4. OK good choices all around to have. I like to cut up sweet potatoes or yams and slowly simmer them in water, with a pinch of sea salt, about a table spoon of honey, a quarter teaspoon of both turmeric and curry powder. Let simmer for 20 minutes or so. Then either eat as they are or make a soup or a pie filling. Just something about the complex flavour profiles that develop with this combination. One could add some chopped dates, figs, currants or raisins to the cooking liquid instead of honey.

  5. You forgot about candied and mashed sweet potatoes, but the best is grilled. Wrap potato in foil, place on grill, turn every 39 minutes and after an hour and a half to two hours (depending on potatoes) you have the creamiest best tasting ever.

  6. i appreciate your comment at 3:40 that you were indeed "acting" and that basic sweet potato fries just aren't that great. Appreciate you being honest…. and then going into the science on how restaurants (and me!) can make them awesome.

  7. Since the outside is already so starchy with that sweet potato starch mixture, do yall think these would lend themselves to oven baked fries? Im thinking of how the British make their fries (boiled to expose starch on the surface and then baked to crisp up the starch) and it's making me wonder…
