Chicken – 1 Kg
Sesame Oil – 3 Tbsp
Mustard Seeds – 1 Tsp
Red Chilli – 10 Nos
Shallots – 400 Gms
Turmeric Powder – 1/2 Tsp
Rock Salt – 2 Tsp
Curry Leaves
Chilli Powder – 1 Tsp
Coriander Powder – 2 Tsp
Method
To a wide kadai, add three tbsp of sesame oil. Once the oil is hot, add one tsp of mustard seeds.
After the mustard seeds starts spluttering, add roughly cut ten red chillies.
Add 400 gms of roughly cut shallots and mix well.
Saute the shallots for five minutes.
Then add half tsp of turmeric powder and two tsp of rock salt and mix well.
Now add the nicely washed chicken pieces with bones.
Mix the Chicken pieces with the shallots.
Add curry leaves and mix well.
Cover the kadai with a lid and cook the chicken for 15 minutes on a medium flame.
After 15 minutes, add one tsp of red chilli powder, two tsp of coriander powder and mix again.
Keep the flame on high, till the water evaporates.
Keep stirring and cook the chicken. The chicken is cooked nicely.
Transfer the cooked chicken to a plate and garnish it with coriander leaves.
Tasty Aasari chicken stir fry is ready to be served nice and hot.
