@Mary2778 asked on Twitter: “Can you freeze egg yolks for use at a later time?” Test cook Dan Souza walks you through how to make a homemade version of cryoprotectant, which lets you freeze egg yolks for up to two weeks.
The test cooks at America’s Test Kitchen answer your cooking questions straight from the kitchen.
To ask a question, tweet us @TestKitchen or ask us on Facebook:
Due to the high volume of questions, we are not able to answer every single one. We try our best, but the test cooks have to get back to testing recipes!
America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

What's the propour way to freeze human meat for later consumption; I'm just asking for a friend?
I do not use sugar in any form, would salt work?
Would salt also act as an effective cryoprotectant? If so would it be the same ratio?
l gave this a try, the yolks were clumpy and sweet. Next recipe!

Could I use an ice cube tray?

When you say "syrup" do you just mean sugar and water? Or do you cook it first?
Do you use the 3/4 t simple syrup to any amout of egg yolks (u used 4 )….Example I freeze mine with 3 yolks. Do I still use 3/4 t syrup?
The amount of the syrup is so minimal I doubt you it would affect the recipe.
with the extra sugar do i have to compensate for it in the recipe?
