Yeah… no. Don't post podcasts on YouTube. Bad form. Start a different channel or something.
All you basically did, was rediscover Sous Vide (water bath, slow cooking). You simply prevented the chicken from over-cooking.
Personally.. If Im going to cook a whole chicken, its going to be using the Rotisserie
Stop using poisonous seed oils!!! Also, the microwave is terrible!

Nice story to give a glimpse of the processes and diligence in how testing these recipes works, and the mistake that resulted in this particular solution. Do wish though, that you had linked the final recipe for this chicken in the comments or on the screen. That would have been the perfect tag-line for this podcast.

I'm not a podcast person so I was ready to not like this, but it's well written and a good story. Now I'm looking forward to more episodes.
One of my happiest accidents years ago was trying to make chilis rellenos. It just didnt work, so I turned it into chili relleno casserole and it was still delicious enough to include in my repertoire. If we dont fail, we never learn. 70 years in the kitchen and thousands of mistakes have taught me a great deal, and I'm still learning.
Holy crow, roast chicken just isn’t that complicated. 375 degrees, 75 minutes, let rest uncovered 15 minutes. Boom. It turns out every single time.
It's bad enough there's no video. When doing the history of America's Test Kitchen, you pretend Christopher Kimball didn't exist.

Interesting video. There is a lot of YouTube videos that I don’t watch the video and only listen to while doing other things.
I liked this story since it is about a mistake and not all about the cooking.
This works well for rib roast as well.
Accidents are the best teachers
This is a variation of a method originally publicized by the nutritionist Adele Davis and used by Chris Kimball's mom for their holiday turkeys. It really upsets the USDA too. LOL I do use Brian's method frequently for chicken.
